Do you or any of your household claim to not like avocado? Well, this may be the recipe to convert them. My husband and my oldest son used to proclaim to all the world that they could not stand avocados. I thought it was weird that my son said this as it is always the first food I make my babies and it was never rejected by him until I offer it in chunks when he had gotten older.
One day I decided that I was going to make myself a sandwich a my family, not knowing what kind I was making, asked that I make them sandwiches as well. This is that sandwich:
- 1 ripened avocado, mashed
- 1 Tbsp. mayonnaise
- 1 tsp. lemon or lime juice
- salt and pepper, to taste
- 2 romaine lettuce leaves
- 2 slices of a medium to large tomato
- 2 strips of crispy bacon
- 3 to 4 slices of natural deli turkey or roasted turkey leftovers
- 2 sourdough bread slices or a tortilla
Make a spread by adding the mayo, juice, salt and pepper to the mashed avocado. Be sure to mix well, taste and adjust to your liking before moving on.
Spread the avocado-mayo onto a slice of bread or the center of a tortilla. Layer your remaining ingredients and either add your other slice or wrap the tortilla closed.
My family ate this sandwich for years, never knowing what was on it, asking for more, and still claiming that they didn’t like avocados. I finally told them what they had been eating and they became open to trying avocados and other foods later on.
