I have been encouraging the people on my Facebook fan page and many of the people I come in contact with to eat a more plant-based diet. Some of the hurdles I have had and seen from others is trying to retrain our brains and come up with tasty recipes. So here is one that is easy and flexible.
- Lettuce (Any variety, but I don’t suggest Iceberg), torn
- Tomato, diced
- Cucumber, diced
- Red onion, julienned
- Sweet pepper, julienned or diced
- Feta cheese, crumbled
- Black olives, sliced
- Olive oil (optional)
- Salt and pepper (optional)
- Oregano (optional)
First, lay a bed of lettuce. Layer the next six ingredients in whatever order you like. Lightly drizzle with olive oil, then add salt, pepper, and oregano to taste. Wrap in a “burrito” style to close.
As an alternative, you can leave out the olive oil, salt, pepper, and oregano, and replace them with hummus spread on the tortilla before laying the lettuce.
Simple. Delicious. Healthy. It’s a great lunch with some apple chips. If you give this recipe a try, let me know what you think of it in the comments. Until next time,
