“Greek-style” Wrap

I have been encouraging the people on my Facebook fan page and many of the people I come in contact with to eat a more plant-based diet. Some of the hurdles I have had and seen from others is trying to retrain our brains and come up with tasty recipes. So here is one that is easy and flexible.

  • Lettuce (Any variety, but I don’t suggest Iceberg), torn
  • Tomato, diced
  • Cucumber, diced
  • Red onion, julienned
  • Sweet pepper, julienned or diced
  • Feta cheese, crumbled
  • Black olives, sliced
  • Olive oil (optional)
  • Salt and pepper (optional)
  • Oregano (optional)
  • Tortilla

First, lay a bed of lettuce. Layer the next six ingredients in whatever order you like. Lightly drizzle with olive oil, then add salt, pepper, and oregano to taste. Wrap in a “burrito” style to close.

As an alternative, you can leave out the olive oil, salt, pepper, and oregano, and replace them with hummus spread on the tortilla before laying the lettuce.
